Lemon Currant Scones

 3 3/4 c Bread Flour

1 TBS + 2 tsp Baking Powder

1 3/4 tsp Salt

2/3 c sugar (1st)

1 c Currants 

1tsp Lemon Zest

2 1/2 c Heavy cream (1st)

1/4 c Heavy cream (2nd)

1/4 c Sugar


1. Pre heat the oven to 375F. In a bowl, mix together bread flour, baking powder, salt, 1st sugar and currants.

2. In a standing mixer bowl, add the 1st heavy cream and lemon zest. Place the dry ingredients on top of the cream.

3. With a pade attachment orby hand, mix the sconres until
