Hot Chocolate - El Tovar

El Tovar Belgian Hot Chocolate

Judy was our waitress at the El Tovar Lodge’s El Tovar Dining Room and kindly copied the recipe for us.  This is a very large recipe.  The amounts in () are for a family gathering.












2 gallons heavy cream (12 cups)
2 gallons regular whole milk  (12 cups)

Bring to a boil in a large kettle

3 ½ lb brown sugar  (1 1/4 lb)
2 cups vanilla (3/4 cups)

Add to boiling cream and milk
1 ½ cups Hershey’s Cocoa  (5/8 cups)

Add last, stirring very well.  When you are done stirring, strain to remove any cocoa lumps.
