Chef John’s Tandori Chicken

This recipe uses readily available ingredients and skips any complicated steps. The result is tender, juicy chicken with that unmistakable tandoori flavor that will have everyone asking for the recipe! 

  1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  1 cup plain yogurt (full-fat works best for tenderness)

  2 tablespoons lemon juice

  1 tablespoon grated fresh ginger

 2 cloves garlic, minced (or 1 teaspoon garlic powder)

  1 teaspoon ground cumin

  1 teaspoon ground coriande

  1/2 teaspoon garam masala

 1/2 teaspoon turmeric powder

 1/4 teaspoon cayenne pepper (or to taste for mild heat)

 1/2 teaspoon salt

 1/4 teaspoon black pepper

  Optional: Fresh cilantro, chopped, for garnish


Directions

1.  **Marinate the Chicken:** In a medium bowl, whisk together the yogurt, lemon juice, grated ginger, minced garlic, cumin, coriander, garam masala, turmeric, cayenne pepper, salt, and black pepper.

2.  **Combine:** Add the chicken pieces to the yogurt mixture. Stir well to coat each piece evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes. (Don't marinate for too long, as the lemon juice can start to "cook" the chicken if left for many hours).

3.  **Cook the Chicken:** You have a couple of easy options here:

     **Grill:** Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers (if using wooden skewers, soak them in water for 30 minutes first to prevent burning). Grill for about 10-12 minutes per side, or until the chicken is cooked through and has a nice char.

    **Oven:** Preheat your oven to 400°F (200°C). Spread the marinated chicken in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until the chicken is cooked through and lightly browned.

4.  **Serve and Enjoy!** Once cooked, remove the chicken from the heat. Garnish with fresh chopped cilantro if you like.
