Lemon Biscotti












2 1/4 c. flour
1/2 c. toasted almonds (chopped)
1 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1/2 c. butter
2 eggs
1/4 c. lemon juice
1 tbsp. lemon zest
1 tsp. almond extract


Directions:  Preheat oven to 350 degrees - line a baking sheet with parchment paper. Mix together flour, almonds, baking powder and salt - set aside. Beat sugar and butter until very light and fluffy. Add eggs, one at a time. Beat in lemon juice, zest, and almond extract. Mix in dry ingredients. Divide dough in half and shape each half into ~11" logs. Bake logs for 30 minutes - until they're a bit brown on top. Remove from baking pan and cut into ~1/2" slices. Toast individual biscotti on baking sheet -about 20 minutes per side.
