German Potato Salad

















4 medium potatoes cut in halves
3 slices bacon
1 medium onion, chopped
1 T. flour & sugar
1 t. salt
1/4 t. celery salt
Dash of pepper
1/2 c. water
1/4 c. vinegar


Directions:  Heat 1” of salted water to boiling. Add potatoes. Heat to boiling; reduce heat. Cover and cook until tender, 20-25 minutes. Drain and cool.


Fry bacon until crisp then drain on paper towels. Cook & stir onion in bacon fat until tender. Stir in flour, sugar, salt, celery salt & pepper. Cook over low heat, stirring occasionally until mixture is bubbly; remove from heat. Stir in water and vinegar. Heat to boiling, stirring constantly. Boil and stir 1 min. Remove from heat. Add crumbled bacon & sliced potatoes. Cook, stirring gently to coat potatoes, until bubbly. Serves 5-6.
