4 eggs
1/4 c. whipping cream
1/4 c. butter
1/2 lb. Canadian bacon
1 c. parmesan cheese
1/4 c. fresh parsley
1 c. tomato mixture
1 lb. fettucine
Pepper
Directions: Let eggs, cream and butter stand 2-3 hours at room temperature. Saute Canadian bacon. Beat eggs and cream slightly . Cook pasta, toss with butter then egg mixture, then bacon, tomatoes, cheese & parsley.
Tomato Mixture
2-3 medium tomatoes pureed
1 small onion chopped
2-3 cloves garlic
1-1/2 tsp. oregano
1-1/2 tsp. basil
1-1/2 tsp. rosemary
1/2 Tbsp sugar
Directions: Simmer all ingredients for 1 hour.
