Ellen's Rolls














Start the night before you want to serve the rolls. 

Proof the yeast. (if the bowl you’re using is cold, warm inside with hot water before starting recipe.) Place 1 package yeast in 1/4 c. warm water. Let sit for 5 minutes.

Make the dough. Add below ingredients to the water and yeast you’ve already prepped:
1 c. warm water
2 beaten eggs 
1/2 cup sugar
1/2 cup oil
1 tsp. salt
4 cups flour (1 cup whole wheat flour, 3 cups regular flour)

Mix together without kneading.

Let Rise! Place damp towel over bowl. Let rise until the next morning. 

Shape rolls. On well floured board, knead dough into one ball. Use knife to cut ball into three equal portions. Roll the first ball out into a circle - it doesn’t need to be too thin, they often roll better if they’re a little thicker/smaller. Cut the circle into 8 pie shaped pieces. Starting at the big end, roll up. Repeat for the next two portions.

Time to bake.  Bake at 350 for 12-15 min until lightly browned.
