Lemon Meringue Pie
















2 2/3 c. sugar
1/2 c. corn starch
1/2 t. salt
3 c. water
6 eggs, separated
2/3 c. lemon juice
1 T. lemon rind

Pie Directions: Combine 1 c. sugar, corn starch, salt, and water. Stir and cook until thick and then 10 minutes more. In a separate bowl combine egg yolks and 1 c. sugar then add to the first mixture. Add lemon juice then cook and put into pie shell.
Beat egg whites. Slowly add 2/3 c sugar. Beat until mixture stands at stiff peaks. Put on lemon pie and bake at 350 for 10-15 minutes.
