Egg Salad Sandwich

Recipe from the Empress Hotel



 




2 hard boiled eggs
2 Tbsp mayonnaise
1/8 tsp. dry mustard
1/4 tsp. Soy sauce
 

Directions:  Chop the eggs and mix in mayonnaise, mustard and soy sauce. Warm for 20 seconds in the microwave. Serve on crisp whole wheat toast. Makes 3-4 sandwiches.
