Chinese Chicken Salad










2-3 chicken breasts, baked
1/2 small head lettuce
3 stalks green onions
2 tbsp. chopped cilantro
1./2 cup roasted peanuts
2 tbsp. sesame seeds (optional)
2 tbsp. soy sauce
1 tbsp. sherry
1 tbsp. sugar
1/2 tsp. ground ginger


Directions:  Marinate chicken breasts with soy sauce, sherry, sugar and ground ginger.  Let chicken marinate at least 2 hours. Bake at 375 for 30 minutes on each side. Let cool and shred by hand.


Sauce ingredients:
1-2 tsp mustard powder
1 tsp sesame oil
3 tbsp. red wine vinegar
1/4 cup oil
2 tbsp. sugar
2 tbsp. soy sauce


Directions: Shred lettuce and cut green onions and cilantro into small pieces. Toss above ingredients and chicken with sauce when ready to serve add sesame seeds and peanuts. Mix well.
