Chicken Kiev














4 whole chicken breasts (boned, split, & skinned)
1/2 c. bread crumbs
1/2 c parmesan cheese
1/2 tsp oregano leaves
1/2 tsp garlic salt
1/4 tsp pepper
4 tbsp butter, softened
1 tbsp parsley (fresh)
4 oz Monterey Jack cheese, grated
5 tsp butter, melted


Directions:  Pound breasts with mallet until 1/4’ thick. Combine in pie plate; bread crumbs, parmesan cheese, 1 tsp oregano, garlic salt, & pepper. In a small bowl combine: 4 tbsp softened butter, parsley, and 1/2 tsp oregano. Spread 1/2 tsp of herb-butter mixture across each breast. Put in Jack cheese. Fold and roll breast. Dip into melted butter. Roll in bread crumb mixture. Refrigerate 4 hours. Bakes at 425 for 20-25 minutes.
