Roasted Kumara Salad


 3 large kumara (sweet potato), peeled

1 red pepper, deseeded, cored

1 orange pepper, deseeded, cored

3 T olive oil

2 t salt

Freshly ground pepper

2 T brown sugar

2 t crushed garlic

1/2 c. sour cream

3 T sweet chili sauce

1 T chopped chives or green onion


Preheat oven to 400. Cut kumara and peppers into roughly 1 inch cubes. Toss with oil, salt, pepper, brown sugar, and garlic. Roast in pan for 15 - 20 minutes, toss after 10 mins, until sweet potato is tender and golden brown. Remove and cool. Combine sour cream, sweet chili sauce and chives/scallions in small bowl. Pour dressing over kumara mixture, hand mix and adjust seasoning to taste.
